Great Grape Chicken

1tbOrange marmalade (I suggest fresh coarsely-grated orange peel)
1/4tsTarragon, crumbled
1/3cWhite wine, dry
1Green onion, thinly sliced (use part of the top)
1cGrapes, seedless (try red grapes, such as "Flame")
1/4cCream, whipping
Salt
