Mateer Paneer-Green Peas and Cheese in Fragrant Tomato Sauce

1tsTurmeric
1/2tsGround cumin
1/4tsMethi; see note in text
1/4tsEACH red (cayenne) & black pepper, (1/4 to 1/2)
1tsPaprika
2cFinely chopped or pureed fresh ripe tomato, or
1 1/2cCanned tomatoes with their juice, chopped
1Jalepeno; finely chopped
1 1/2cShelled fresh green peas; or
1Ten-ounce package frozen peas, defrosted but not cooked (I don't bother to defrost)
2tsKosher salt
1/4cCream (scant)
2tsGaram masala; or more to taste
4tbFinely chopped fresh corianger leaves, (cilantro)
